Apricot Chipotle Glazed Meatloaf

Chipotle Apricot Glazed Meatloaf

Chipotle Apricot Glazed Meatloaf with smashed sweet potatoes and asparagus.

Apricot Chipotle Glazed Meatloaf (serves 4-8 and makes wonderful leftovers!)

I made this for dinner two nights ago, then had some of the leftovers for lunch today.  It actually tasted even better as a leftover! So, this is one of those recipes that you do the work once and get to reap the benefits many times over!

Meatloaf Ingredients

  • 1-1.5 lb of 85% ground beef
  • 1 lb of ground pork
  • 2 T olive oil or veggie oil
  • 3 cloves garlic, finely chopped
  • 1 small onion, finely chopped
  • 1/2 c plain yogurt
  • 1/4 T flavorless gelatin
  • 1T dijon mustard
  • 2 eggs
  • 1 T thyme
  • 1 T salt
  • 1/4 T ground pepper
  • 3/4 c plain quick oatmeal (or crushed saltines)

Meatloaf Instructions:

  • Preheat oven to 350.
  • Lightly mix ground beef and pork together and set aside.
  • Saute chopped garlic and onions in oil until softened and caramelized. Set aside to cool.
  • Beat eggs in a medium to large mixing bowl then and add yogurt, gelatin, mustard, thyme, chipotle pepper, salt and pepper.  Mix ingredients together well.  Add oatmeal to wet mixture until completely combined.  Allow mixture to sit for about 5 minutes so oatmeal absorbs some of the moisture of other ingredients.
  • Add wet mixture to meat mixture and combine with hands.
  • Put meat mixture onto sprayed cookie sheet or shallow baking pan and mold mixture into an evenly distributed loaf.
  • Spread glaze onto top and sides of loaf and place in center of oven.  Cook for approximately 1 hour, then move meat to top burner and broil for 2-5 minutes to caramelize glaze.
  • Remove meat from oven and allow to sit 10-15 minutes before slicing and serving.

Glaze ingredients:

  • 1/2 c canned apricots in syrup, chopped (drain all but 1/4 c syrup)
  • 2 T honey
  • 1 jalapeno pepper, chopped
  • 1 chipotle pepper in adobo, chopped
  • 1T cumin
  • 1 t salt
  • 1/4 t ground pepper

Glaze instructions:

Mix glaze ingredients together and reduce in small pot on med high for about 10-15 minutes.  Place mixture in blender and blend until mostly smooth.  CAUTION: When blending hot ingredients, be sure to remove center cap from lid of blender to allow steam to escape.  Hold towel over opening to prevent splatter.
