This Raw Almond Yogurt recipe is awesome for those on raw diets, vegans, vegetarians, or lactose intolerant. It’s simple, easy, and surprisingly delicious!
I love eating this dish for breakfast or an afternoon snack. Yum!
Ingredients:
- 1 cup of almonds
- 1 cup fresh water
- Fresh squeezed lemon juice from about 1/2 lemon
Directions:
Soak almonds about 8 hours in enough water to just cover the nuts (this will help to leach toxins out of the almonds and make them easier to digest). Drain the water.
Blend almonds in a high speed blender or food processor with about 1/2 cup of water and lemon juice. Add more water if necessary to get a creamy yogurt-like consistency.
Transfer mixture to a glass bowl and cover with cloth. Allow to sit on counter in a warm place (80-90 degrees) for about three days. Mixture will turn more sour like yogurt.
Fast Directions:
If you don’t feel like waiting three days, you stir in 1-2 capsules of pro-biotic to the almond mixture and let it sit for 30 minutes or longer. The longer it sits, the more sour it will become.
Top with fresh fruit, hulled hemp seeds, sunflower seeds, cocoa nibs, or enjoy plain.
